Jalapeño Black-Eyed Pea Burger

Traditionally, black-eyed peas are said to bring good luck and prosperity, so why not stack up the good vibes with a flavor-packed burger?

With creamy avocado, zesty lime, and a kick of jalapeño, these patties are full of vibrant flavors and nourishing ingredients. Perfect for meal prep or a weeknight dinner, you can serve them on whole-grain buns or lettuce wraps and load up on your favorite toppings. Whether pan-fried or baked, these burgers are sure to be the star of your table.

Ingredients

Setup

  • 1 1/2 cups cooked black-eyed peas (or one 15 oz can, drained and rinsed)

  • 1 small ripe avocado

  • 1/2 cup finely diced onion

  • 2 jalapeños, finely diced (remove membranes and seeds to lower the heat)

  • 1/4 cup fresh parsley or cilantro, chopped

  • 1/4 cup oat flour (or more if needed for binding)

  • 1 flax egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water, let sit 3 minutes)

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • 1/4 teaspoon salt (or to taste)

  • 1/4 teaspoon black pepper

  • Juice of one lime

  • Whole-grain buns or lettuce wraps for serving

  • Optional toppings: avocado slices, tomato, lettuce, or vegan mayo

Directions

Heat a skillet over medium heat. Sauté the onion and jalapeño for 3-4 minutes, until softened and fragrant. Add a few drops of water for veg broth if it begins to stick. Remove from heat and let cool slightly. Next, mash the black-eyed peas and avocado together in a large mixing bowl, leaving some chunks for texture.

Add the sautéed onion and jalapeño, parsley or cilantro, oat flour, flax egg, lime juice, and spices (smoked paprika, garlic powder, cumin, salt, and pepper). Mix until everything is well combined. Add more oat flour if the mixture feels too wet. Place the mixture in the fridge and allow to chill for at least one hour.

Form the mixture into 4-6 patties and get cooking!

Stove Top Instructions

  • Heat a non-stick skillet over medium heat (you can line the pan with parchment paper for easier cleanup). Cook the patties for 4-5 minutes on each side, until golden brown and firm.

Oven Instructions

  • Preheat the oven to 375°F. Place the patties on a parchment-lined baking sheet. Bake for 20 minutes, flipping halfway through, until lightly crisp on the outside.
